Healthy Recipe: Grilled Vegetable Pitas

INGREDIENTS:

1 4-ounce Portobello mushroom
1 tsp. balsamic vinegar
1 tsp. olive oil
1 large, round whole-wheat pita, halved
8 fresh spinach leaves
8 small, fresh basil leaves
1/4 medium yellow or red sweet pepper
1/4 cup chopped tomato
1/3 cup crumbled feta or goat cheese
1 dash salt and pepper

DIRECTIONS:

1. Combine vinegar, oil, salt and pepper in a bowl and brush ½ of mixture onto mushroom and peppers.
2. Place mushroom and peppers on a rack on the grill over medium heat. Grill for 10-12 minutes, turning frequently.
3. Combine remaining oil mixture and tomato in a bowl, then cut vegetables in strips and add to tomato mixture.
4. Open pitas, and line with spinach and basil. Fill with vegetables, and sprinkle with cheese.
